One of the interesting aspects of zymurgy is that bringing together all of the necessary bort, and doing nothing to innoculate said mash in a well established brewery will introduce, slowly to be sure, enough spores of beneficial yeasts that the processes of fermentation can occur.

Same thing happens to any ripened fruit. Birds, bears, deer and many other species enjoy a nip at the ethanol courtesy of totally natural processes. Hugo may have been hubristic, or maybe he just extended his name from Victor Ego, but for him to assert that man is responsible for wine is like saying the bottler of ketsup is responsible for the original smashed tomato. I know better. It was pre-pubescent boys, not men, having some Halloween fun at the expense of their neighbor's freshly painted siding....
