Yes, the Fib's are now holding any changes you make to the defaults. I've made color and percent changes, saved the defaults, exited out, and they're still correctly set when I launch again.

To change the colors for the bars, right click on the main body of the advanced chart and choose Edit Studies. We're considering the Price as a study to keep all those type of properties in the same place.
