I am still trying to select a boat to buy and am unsure whether I want a sit-on or normal kayak, inflatable or folding, sub-40 lb. or sea kayak.

What kind of paddling will you be doing, on what kind of water, in what kind of weather? Most boats are good for something, the trick is to select what works for what you want to do.

The inflatables I've paddled tended to get pushed around pretty badly by even moderate winds. Not good for fishing: hooks and inflatables are not a good combination. Some of the folding boats are beautiful (Feathercraft especially), but they are very expensive. Worth it if you travel a lot, not if you don't. If you will be fishing, especially in cold water, think about open canoes. Sit-on-top kayaks are mostly self-bailing, meaning your butt is always wet.
