I bought a cheap little inflatable Stearns kayak for my neighborhood creek

No reason it shouldn't last a while. Be careful how you store it: out of the sun, ventilated, well away from rodents (for some reason they love to chew inflatables).

A local shop, California Canoe and Kayak, has a program where you give them a $200 deposit and you can try out every kayak and canoe they sell for a maximum of 90 days

If I had a shop like that around they would get to know me really well. Try them all. Try some different paddles too, they make a big difference.
