In store bakery features wood-fired bread oven
(SCARBOROUGH, ME)-Where. can you go to watch a farmer in Aroostook County grow and harvest the wheat that is then milled into flour and used to produce freshly baked artisan breads for sale in Portland?

Answer: Hannaford on Forest Ave. in Portland.

Since July, Borealis Breads has been baking bread and showing customers where one of its key ingredients comes from at its new location inside of the remodeled Hannaford on Forest Ave. In a first of its kind arrangement, Borealis Breads is operating its own 600- foot square bakery stall within the store.

The Borealis Breads bakery is selling a variety of its signature breads as well as pastries and other products. Additionally, bread is baked on-site in a special wood-fired oven that will allow customers to watch the baking process.

Hannaford Store Manager Lisa Moses-Oliver is enthusiastic about the unique, collaborative project. "We're excited about having Borealis Breads in our store," she said. "They offer high quality bakery products made with Maine-grown ingredients."

With its wood-fired bread oven and continuous multimedia presentation, Borealis Breads founder and president Jim Amaral hopes to increase consumers' awareness of the agricultural enterprises that enrich the quality of life for Mainers.

"Through the use of web based technology and old-fashioned artisan baking, we will remind consumers how our food choices can contribute to our sense of self and our sense of community," he said.

The multimedia presentation provides video footage of the farms and farmers in Aroostook County and will offer live web cam feeds of farmers in Aroostook County starting in early 2002.
The presentation was funded by a grant from the Maine Department of Agriculture, Food and Rural Resources. It will also feature the first commercial application of a new technology called hypersonic sound. Hypersonic sound focuses sound waves in a manner similar to that of a beam of light. Customers standing directly in front of the presentation will hear it, while someone standing only three feet away will not.

Amaral believes that his new in-store location will increase consumers' awareness of the agricultural enterprises that enrich the quality of life for people who live in Maine.

"Given the number of customers who shop in the Forest Avenue Hannaford, we have a unique opportunity to reach an urban audience and introduce them to Maine farmers in an entertaining and informative fashion."

Borealis Breads offers farm photos and farmer trading cards, recipes, and serving suggestions to complement its product offerings.

Amaral and his wife, Dolores, founded Borealis Breads in 1993 in the basement of a restaurant in Waldoboro. Today the company employs 60 full time associates and sells its products in the Portland Public Market, at its production/retail facilities in Wells and Waldoboro, and at a number of retail outlets from Bangor to the North Shore of Boston.

The newly-remodeled Hannaford on Forest Ave is one of 46 Hannaford-owned supermarkets and food and drug stores statewide. Hannaford Bros. Co., based in Scarborough, Maine operates 114 supermarkets and food and drug combination stores in Maine, New Hampshire, Vermont, New York and Massachusetts. These include stores under both the Shop'n Save and Hannaford names. A wholly owned subsidiary of Delhaize America, Inc., Hannaford employs 20,750 associates.
