So why do they buy their key high end components from someone else?

Their own stuff is just "too good to let go?"

They're saving their FAB space for the low end parts?

You know, we've recently seen fresh news about Intel chipsets continuing to be fabbed by TSMC, now we know that Marvell makes their high end network parts for them. It looks like Intel doesn't FAB much more in the way of non-CPU parts than AMD does. Intel just spends 8 to 10 times as much on their FABs for 4 times the capacity.
