Taco Soup

2 or 3 tbls olive oil into large skillet

add
three (3) large diced onions
and sear over HIGH heat

add
5lbs of groundbeef
OR
5lbs *(my preference) any kind of roast cut into fairly large cubes

brown
using HIGH heat until meat obtains a slight crust

into a LARGE pot
add
TWO (2) each #303 size cans of
carrots
corn
english peas
hominy
carrots
blackeyed peas
sliced green beans
any rounded firm beans (your preference as to kind == pinto, red, kidney, black, etc)
Rotel brand canned tomatoes

THREE (3) cans
tomatoes

don't drain any of the cans ==== USE ALL the liquid

Two (2) packets of Taco Seasoning (Williams brand is what I use, but Lowry's or McCormick or any other is fine)

*****(use any/all/none) of these, depending upon how HOT you wish the finished product
I use
3or4 tbs of diced garlic
small can of diced green chilies
couple of diced fresh japelenos OR 4 preserved ones
tabasco brand hot sauce
it will be somewhat spicy without any of the last ingredients
if one doesn't like it HOT ...
don't do what I do ...

bring all the ingredients to a boil and reduce to a slow simmer for NO LONGER than ten minutes
as too much will "flatten out" the taste of the tomatoes

if you like it thinner ...
add tomato juice OR tomato soup
if you like it thicker
add cornstarch *(important to dissolve the cornstarch in water BEFORE adding to the soup)

IF there is any ingredient YOU don't like
as there is always some thing in the list that some folks DON'T like ....
just leave it out

add salt and pepper to taste
after
it is heated

this makes a lot of soup
so,
share some with your friends/neighbors/family
