Here is an intriguing recipe...
In a small crockpot, put in 1/2 cup of dry tapioca. I like to mix medium and small sizes about half and half. Add a pint of soy milk, pint of buttermilk and a pint of whole milk (you can use skim). Cover and heat on low and stir after the first 15 minutes or so. After 4 hours, stir again and turn off the crockpot when it has absorbed all the liquid.

Take a quart of milk (skim or whole as before) and beat in 3-4 eggs. Add a smidgin (technical term) or pinch of salt and bring to a boil... stirring to keep it from burning. (You can do this in a double boiler, but it takes much more time... and it will not come to a boil). Pour in the tapioca from the crockpot and mix well and bring back to a boil. Take off the burner once back to a boil and cool 5-10 minutes or more but do not let set.

Pour in 1/2 tsp vanilla and stir well and then add 16 or more packets of Equal... my wife suggests maybe 20-24 would be better but it is great with 16. Stir well and ladle into dessert dishes and let cool and set. I cover with baggies and then put in fridge when cool.
