Well, the part about zero knowledge I can believe :)

You could run Linux with the Reiser (journaling) filing system. Don't have to worry about FAT table erasure. If you run multiple redundant UML (User mode Linux) virtual machines, then if one machine gets hacked the other with different passwords can take over. It must be monitored by a third, perhaps discrete machine. Chances of them getting past the chroot jail or getting to root are much slimmer on Linux/Unix. It might pay to have an intermittently mirrored and dumped machine that stands backup. It's chances of being hacked are much less.

If you run a firewall, you should run a bastion host dual firewall system with firewall on input and output streams. It would be some hard to get past that without it being a total backdoor in some hackable program like ftp, SUN RPC, or sendmail.

If you don't want people to read your mail, use PGP or GPG with a 16384 bit RSA to blowfish key. The trouble is getting people to use it. It ain't that hard. But the installed base is poor. It isn't as point and click as it should be with mail tools.

And with Linux you get no viruses. 64,000 fewer viruses than Microsoft Windows.
