There was an interesting article on the subject of fat=bad and carbohydrates=good in the recent NY Times Magazine. It would seem that all is not what it appears to be. I thought some of the information quite startling, given what we are told vs. what is actually proven: nytimes.com (In case anyone complains about not being able to read it, registration is required but it is FREE)
