Unfortunately engineering seems to have a different mantra. We ask senior engineers, who are capable of making say 200-300K in the open market as consultants, to take a 100K pay package with options, while they are expected to put in 6-day workweeks 10hrs/day.

If all those engineers actually believed they were making a great sacrifice to work for the publicly held companies versus running their own private engineering consulting firms, why aren't they all leaving to start engineering consulting firms?

With regard to stock options, I do agree that the bulk of the problem with stock option abuse lies in the upper executive suites.
