Did you miss out on the invasions of Lebanon in 1978 and 1982, and the subsequent occupation of southern Lebanon? They were finally driven out by Hezbollah very recently.

And since then, they gave back the Sinai in exchange for recognition and some security guarantees - there are some US observors in the Sinai.

To clarify, they rejected such terms from 1967 until 1973. After witnessing Egypt's military potential in the 1973 war, all of a sudden negotiations began. Note that Israel rejected UN peacekeepers following its 1956 invasion of Egypt, and rejected UN peacekeepers again in 1967 before their second invasion of Egypt.
