Inventory values change when their practical value is decreased (impairment). Goodwill and other intangible assets are often written off or adjusted to reduce shareholder equity figures.

There is no reason why options treatments can't be handled similarly. If the options are underwater or at parity with the stock, the value can be zero. If the options are in the money, then tracking the net change (or compensation value) would seem appropriate for certain valuation metrics.
