Joe, thank you, but I have eaten smoked Bluga,and washed it down with Vodka as far north as Tsaritsyn (ex-Stalingrad).
The Talesh people living in lower Azerbadjan Republic smoke Bluga under a low earthen smoke house, and the salted fish dries up and can be preserved several years. Although it is called White Fish by the Talesh "Mahi-sefid" and by Azeris "Biaz-Balik", the meet, when eaten smoked is redish, and nice to chew on. Let us say it is like Beef Jerky!
