I think they use some sort of corn flakes in their recipe, at least it looks like it?! When the flour and spices are being used to coat the chicken, the excess milk egg mixture (already dipped on the chicken pieces) produces "flakes" in the flour that end up sticking to the chicken pieces. I am no professional expert though, maybe SI thread members who do know the KFC operation thoroughly may care to comment -g-
