First, they act in ways directly counter to their self- interest all the time, as I observed. Second, as I also observed, one tries to balance between one's interests and that of others, so that one is fair to all, so one minimizes conflict if possible. Again, it all comes down to your assumption that if something matters to you, it is reducible to self-interest, regardless of the nature of the object of concern.
