I don't know many grampas that don't have a cookbook, but you may be one of them so here goes.

The directions are crude, but I'm giving them to you the way they were given to me. You'll figure it out. Add stuff, omit stuff, the basic broth is great.

Minestrone

2 LBS of chuck roast
4 Quarts of water
1 t salt

Put this all in a big soup pot and bring to boil. Simmer till tender. Refrigerate overnight. Remove fat.

Add:

1 chopped onion
2 chopped carrots
2 chopped celery stalks
3 small zucchini
1 can chopped tomatoes
1 can kidney beans
1 can baked beans
1 can garbonzo beans
1 6oz can tomato paste
1 LB sausage cut up
2 T parsley
1 t basil
1 t oregano
1 package frozen chopped spinach

Cook for 1 hour and add some pasta if you want. (I always do)

The longer you simmer this the thicker it gets.

It's like stew.

I freeze it and eat it for lunch all the time in the winter.

It's really yummy. ;)
