Great that you did a test like that. I'll share your comments with my friends. The Vermont cheese is actually an Abbondance, and, if French, not properly called "Tarentaise" since that is a particular locale and breed of cattle (perhaps only the breed of cattle).

Any clarity on the July date stamp on the wheel? July 25 is my recollection which means it is the better rennet, and that won't be fully aged until late January, as you know.

Good of you to sample it, thanks. I'll let you know if my friends have any comments...such as I think the fellow they hired to come teach them how to make it is from Jura.
