Thank God....! Didn't like the idea that Vermont cheese or maybe all hand made cheeses used spital to provide enzymes.... smile But did believe it for a while and couldn't discard the idea. ...smile What you and all your Vermont farm holders are doing is in the fore-front of the next generation of produce providers. As to your finished lamb, that's what the cheese buyer said, they get your production for their kitchen..., don't believe I could buy it directly through them...? But Bread & Circus..., they just import New Zeland lamb.
