FWIW, my version of the Christmas cactus was done in situ on the dining room table with a deep burgundy napkin draped over a knife and held up as a backdrop, all handheld and all just whatever light nature was giving me. There was a second blossom in the shot, which I deleted, and a hot spot in the backdrop which I toned down.

As for the black, I grew up in photography under the influence of the likes of Wesson ... all B&W, of course. One of the principles of the zone system was that somewhere in the picture there should usually be a pure saturated black and a pure white .... but "somewhere" doesn't mean 50% as a general rule.
