I'm going to skip ahead to your third issue for the moment, as it's the easier one to tackle. If I'm on the same page with you, then you want to mask specific areas and make multiple adjustment layers:

I've made the chile pepper an obnoxious pink (w/ HSB) to make this easier to see. You can see the masks and adjustment layers in the layers palette (bottom right of image). The arrow points down to the temporary adjustment layer shortcut. After you've made a selection (any selection), click that button to pop up a list of different kinds of adjustment layers. Here, I've made two, HSB and Levels. Levels is currently shut off. Am I correctly interpreting your post so far?
