You're welcome. It's a simple thing, but lawd hab murci is it good. Let the thing roast until the outer skin is nice and crispy. It should have a nice dark appearance. Slice and serve with bits of the crispiness attached. Memorable.

We ought not eat such fattening things frequently, but in moderation I have found it really doesn't matter. I think drinking fat red wines with your food (as I do) also helps neutralize the fat. I have thought this long before the "scientists" got around to making these claims. Perhaps its just the effects of tannins, but I can actually feel the wine "dry" my mouth as I taste it.

Yah, the minced garlic is just tops. We have jars of the stuff because we use it in very many things. I gave up mincing fresh garlic ages ago because the stuff in jars is pretty blame close to the fresh stuff.
