If something has a beginning (creation event)then it's not eternal is it?

I cannot see how you can make such an absurd claim. "Eternal" has to do with end not with beginning.

On the other hand if something is eternal and uncreated (without a beginning) then it must self existent. What other options are there?

There are other options - ex: molecules react without any outside help and hence things can come into being without "creation".

Your EDIT(impersonal) explanation of the universe does not sufficiently explain either personality or morality

You need to read a bit about the current understanding of the brain and personality as one of its functions. As for morality, it is self-imposed by persons in a community. Example: Inuits (eskimos) do not have a word for "jealousy" and they would offer their wives to guests. Another example: some tribes have cannibalism. Id est: One person's morality can be very different from another's and hence is not engraved into humans from "creation".

I don't claim to understand Quantum physics do you?

Yes, I have a fair understanding of it, as a layperson who has read a couple of books on the subject - a practice you might consider emulating.

Just the fact that things can be observed and then not observed does not mean they come into existence out of nothing.

Huh? That's not what quantum physics says at all. However, particles HAVE BEEN OBSERVED to appear in a vacuum. Look it up.

Talk about your logical fallacy

I suggest you read about logic and logical fallacies before you talk about them. This is not a place where they apply.

If you believe that then watch me pull a rabbit out of my hat

Again, irrelevant. Scientists who have observed a vacuum and documented particles appearing out of nowhere are not being fooled by some magic and their instruments are not being tricked by some illusion.

I'm all for science but scientists change their theories more than they change their socks.

Hardly. Still, I guess your opinion might be influenced by how often you change your socks in a decade, though.

Spontaneous generation is an old and discredited theory

I can only say that you have not read a book on astrophysics or quantum physics in more than a decade. Look it up.
