Hi Again,

The garlic in the jars that you purchase has a bit of a chemical taste. We prefer the fresh garlic and use a ton of the stuff......but we also live in an agricultural area and get gifts of fresh garlic from the local farmers during the late summer months. I also get cases of Red Bell Peppers and make some Sweet and Sour Red Bell Pepper pickles that are delicious. Fresh garlic is preserved as part of the ingredients.

I can tell if a recipe has that processed garlic in it. It has a telltale taste that I can recognize anywhere. I use four heads of garlic in my cioppino sauce so I have alot of experience using the spice.

TO clean the cloves more quickly, you can place a broken up head of cloves in water and zap it for 35 seconds in the microwave. The heated water helps to soften the papers that cover the cloves and make them easier to remove. Don't microwave the garlic too long or you will decrease the pungency of the spice.

The use of garlic as an ingredient is one of my cooking specialties.............I have several recipes published in cookbooks that use alot of garlic. One I called Patrician Escargot and showcased delicate, infant French snails stuffed into a mushroom cap and smothered in a spicy garlic
blanket.

It's not good to eat like kings all the time, but it doesn't hurt to do it once in a while.
