SUpposedly, a snail brand called "Enfant Riant" is a special breed that is "purified" by allowing them to feed on corn meal for a two week period prior to harvest ( sacrifice). I would be curious as to how them sacrifice them.

CLams and Oysters aren't structured in a way that allows you to remove their body wastes and water filtering systems. When you eat a clam or an oyster you are ingesting everything. At least you can devein a shrimp but they are high in cholesterol ( or so I am told).

I agree that clams and oysters are delicious. Mussells are another close relative.........Even crab filter water through their internal gill system.I think lobsters are similar. I cleaned a whole bunch of all of those critters.

The contamination of our coastal waters has made it difficult for those crustaceans to remain non-toxic. I heard recently that many more species of Whitefish are now becoming more heavily contaminated with mercury........Halibut was just put on the list along with Swordfish ( which has been contaminated for a few years now ). It's a shame....I would imagine that Salmon is probably already semi-toxic and will be found contaminated in the near future.

Organic Legumes may soon be the only source of uncontaminated protein.
