Why did "you" support Iraq if you thought its victory was "undesirable"?

For the same reason we supported the USSR during WWII. Iran was an active enemy of ours. Accordingly we didn't want them to conquer Iraq. That doesn't mean we wanted Iraq to conquer Iran or annex any of its territory.

And do tell if Saddam was any less evil at the time when US was supporting him against Iran. I am all ears.

No. And Stalin was not any less evil at the time we allied with him against Nazi Germany.
