Your large bets and reasonable payoff strategy is most like my strategy when it comes to the stock market. My margin account is 90% short options with proceeds tucked into T-notes. This week I have been doing quite a few ratio positions on rmbs where the 2005 leaps are mis-aligned. Buying eight 25 calls and selling ten 30 calls with a small credit going into my account and hopefully additional future profits upon gradual liquidation of long position. A more straight forward position is vxgn put/call write. August 35 call and August 5 put with $2.10 per combo. With stock at 13.5 the payout seems reasonable compared to risk.
Have you looked any further into the British E-Bay like betting pools? This would be ideal way to play bettor inconsistencies. Many years ago I ran some statistics on favorites placing either first or second in exacta. Favorites running second had better expected value. I do not handicap any longer but it seems that if you are a good handicapper and use bettor behavior as a factor, then British system would be a great place to bet.
