The basic ingredients are there but the've been citified a bit.<g>

Up until recently, most Cajuns....... or Creoles for that matter, didn't eat the kinda salad that most other folk do. Their idea of salad is macaroni or potato......not a salad made outta greens. We eat our greens a little different and mopped up the liquid with crusty bread.<g>

Cajun and Creole food is a mixture of many different cultures but they have one basic thing in common, they're all very simple dishes.

We eat a lotta seafood, pork, vegetables and fruit. I'm guessing the orange roughy is a substitute for red fish because the textures are similar.

All in all I'd say you would be experiencing a new version of Cajun and Creole cuisine, a modern update maybe. That's one of the great things about food, it's always evolving.

It all sounds good, I'd go!
