Well, here are some California substitutes...but there is nothing in these that comes close to the Widow from Veuve or Pol Roger Winston Churchill which I drank at the turn of the century. Most of the champagne houses have established California cuvees. My favorite is Roederer Estate Brut Rose. It is hard to find a purely Californian sparkling wine but here is my list: Iron Horse Schramsberg Gloria Ferrer These all make fine apertifs but most do not have the gravitas to drink throughout a meal as I often like to do.
