I go with 8. You've probably done enough jpgs to guess which ones are more prone to artifacting than others ... maybe some of that Kingman party stuff? Or material with close-ups against continuous tone, blurry backgrounds. Just grab one and do 4 different saves... "3" to help identify problem areas, then "5", "7" and "9" to see how those areas clean up. I've nearly always found 7 to be close, not quite there, and 9 gets too heavy in file size, thus "8".
