My last 300 mile bike tour (in 1996) was around the Gaspe Peninsula in Quebec province. Near the town of Perce there is a small recreation of how cod was treated and prepared for shipping back to Europe, back in the 1700's. Cod was plentiful and there was huge demand for it especially in Catholic Europe (fish on Fridays). Unfortunately, little of the wealth was invested locally; it all went back to the (Belgian, I think) company the French King had granted the cod monopoly to. Typical of French colonialism. Quebec was poor and stayed poor.
