Well, given they've been an ally for a very long time, I think we should care if they're happy.
And given they're essential for control of the region, it might be as well if they were. Rough on the Kurds, however, and we did treat them as allies too and promise them democracy.

As far as them having the might to enforce it... well, they've got the second-biggest NATO army, and it's a tad more modern than Saddam's was - they're big customers. Would the US go to war with its own ally to stop them? Europe, and Russia, would be really displeased, and scared of what the US might do or plan next... they'd be on Turkey's side, probably even Britain. And, of course, the ME would really fall - expect ructions in Egypt, Arabia, etc...
IMO the US fighting Turkey would be a great way of starting WWIII with a very big bang. I suppose the Chinese might be around to pick up the pieces...
