This is a huge subject which you can easily research on the Internet. The Jewish Torah (most of what today we call the Old Testament) has been very carefully preserved from BCE days, letter by letter in Hebrew. The English standard (including both Old and New Testaments) for most Christians is the 1611 King James Version (KJV) but, if you want more readable text in contemporary Engilsh, the New International Version (NIV) is probably easiest to read.
