I would make the pork country style ribs myself. Let me help you out a tad.

Make this rub:
in a small bowl combine 1 tbsp paprika, 1 tbsp garlic powder, 1 tbsp packed brown sugar, 1 tbsp onion powder, 2 teaspoons chili powder, 1 teaspoon course salt, 1/2 teaspoon ground black pepper, 1/8 teaspoon ground cumin and 1/8 teaspoon cayenne pepper. Rub it all together with your fingers and then apply liberally to your ribs on both sides and put them in the fridge for overnight to let everything soak in.

Sauce Ingredients:
1 tbsp olive oil
1/2 cup finely chopped onion
2 tbsp finely chopped green onion
1 small fresh jalapeno seeded and finely chopped
2 tsp bottled minced garlic
1 8 oz can tomato sauce
1/2 cup ketchup
1/4 cup water
1/4 cup packed brown sugar
3 tbsp worcestershire
2 tbsp vinegar
1 tbsp lemon juice
1 tbsp bottled hot pepper sauce
1 tbsp spicy brown mustard
1 tbsp molasses
1 tsp chili powder
1/2 tsp coursely ground black pepper
1/8 tsp ground allspice
1 tsp liquid smoke

OK now in a large saucepan heat the olive oil over medium high heat. Add onion, green onion and jalapeno pepper; cook until onion is tender, stirry occasionally. Add garlic; cook for 1 more minute.

Add tomato sauce, ketchup, water , brown sugar, Worcestershire sauce, vinegar, lemon juice, hot sauce, mustard, molasses, chile powder, black pepper and allspice. Bring to a boil and then turn down and simmer gently while covered for 20 minutes.

Stir in the liquid smoke and cool. Pour this fantastic sauce into a jar and refrigerate. I do this about 3 days ahead of rib time to really let the flavors blend together.

Now I cook the ribs in my indirect cooker and I want them to take about 3 hours so I keep the heat down around 225. I use hickory chips for my smoke and start basting with the sauce after about an hour and a half.

Be careful how many folks you allow to try this because your crowds will grow exponentially. I am in the process of looking for a new smoker at the lake as I have now been informed I must make for the entire resort for labor day. About 60 trailers worth along with their families. Oooofda!

So get started now as you need some prep time:)
