Well, not only taht... Even when one's not talking about inanimate things, "which" and "that" are not interchangeable. Many people use "which" when they....shouldn't....

A few years ago, a friend of mine pointed out to me (laughing herself silly) signs at tollbooths on the Pennsylvania Turnpike that (NOT "which") said: "People That Care". I laughed as well. But by now it's endemic. And pathetic. The "that"-"which" distinction isn't all which clear, but "who"-"that" ought to make sense to anyit.
