Mostly, French rely on dogs trained to find the truffle. And they don't beat the dogs up in the process (for God's sake).

Truffles add a rich taste to pretty much every dish they are added to. Of course, it cannot be as refined and enriching as the ketchup, favourite of the American "cuisine", but what can you do? The French make do with what they can...
