Ironically, before SARS came along, the civet family was perhaps best known for the role of the closely related common palm civet (Paradoxurus hermaphroditus) in producing the so-called "cat dung" coffee made in Indonesia and Vietnam. Apparently, these civets like to eat coffee berries, and when they do, the coffee bean itself, which is indigestible, passes through and is released in their dung. The dung is then collected, cleaned and dried. The coffee made with this process is considered to be extremely high quality because the civets are more selective than any human picker, and choose only the ripest berries to eat!
