Do you see this as an appropriate analogy?

Well, yeah. Why don't you?

If you don't want to touch something that offends you, you work at some other job. I could never work as a beautician because I'm chemical sensitive. I guess I could set up a shop and only do cuts, but my business may not prosper. Likewise, your masseur could try to get a job at a private men's club that doesn't admit gays. That would work, but his options would be so limited that it would be better for him if he were in another line of work.

Why is that a matter for you or I to decide?

It's up to the masseur and the vegetarian to determine what they want to pursue as a career. It's up to the marketplace to determine whether or not they will be successful or if they should have made a different choice. I would not presume to guard anyone's conscience. Just offering friendly advice. Just as I would advise men to keep their pants zipped unless their partners were "safe."
