I love wild turkey. Just can't overcook it. But it is a much different food from that tasteless thing most people buy at the store. I usually get at least one turkey a year (either I do it, or one of my kids). Last year was a rough one, but I got it just in time for Thanksgiving.

But as for goose, I get plenty - each of us limit out. They are everywhere on our property. You just have to know how they will come around.

Sometimes I really luck out unexpectedly. A few years ago we were floating down the Rappahannock to jump shoot ducks. Had parked one car about 11 miles down river went back to the other car to float for about 7 hours. We were in just a little goofy John boat, shooting class 2 rapids (I'm NOT kidding. And it was pretty fun too). After we had limited in ducks, we put everything away and started to fish. Then we went around a bend. On a little islet right in the middle of the river was a large flock of geese - just sitting there! They didn't see us at all, so my son slowed the boat and we got ready. We floated right up to them and when they flushed, we had quite an amazing time.

LOL. I'd love to make summer sausage, pastrami and the other stuff I usually get made. I prefer venison versions far more than beef versions. I just haven't had the time to get deeply into the rest of it. It seems you need a lot of equipment and stuff I haven't a clue about using (and no time at the moment to learn).
