Most places like to serve cats skinned, gutted and headless. That still leaves the pesky epiplural bones in place. That said, one year we were in Canada, not much biting, then we hit a school of bullheads that ran about a pound each. Hummm. We worked the school and caught a bunch of them. Clean cold water lake so I fileted them. Fried them up boneless and they were as good as any fish in the lake.

Guy at the coffee shop, Owen, fought on Iwo Jima as a 15 year old and again in Korea until 2 of his brothers were killed, has caught more catfish than all of the people on SI combined. Even now he'll wake up at 2am, hook up his jon boat, net bait and drive 4 hours, launch his boat, fish all day and all night and drive home. Last year he went for a week and worried he didn't have enough bait with 800 frozen shad. What's amazing is he's never eaten a bite of fish.
