I have done it, and I would still do it if I was so damned old.
Adrenalin is it - it's why you see FEW of these guys standing around looking like they are cold, but where you or I freeze just by running out to the mailbox for 15 seconds when it's 30 degrees out.

This is why you see all the folks on the sidelines that are NOT playing (like Photographers, etc.) bundled up like they are freezing, but the players look ALMOST like it's a day at the beach.

I would imagine if it was a big problem, the NFL would cancel the games or move them. Maybe one of these days you will see AFC/NFC Championships played in neutral (warm) stadiums.
