Being on the gulf myself, I found that very interesting.

Red drum (called redfish here) are pretty easily raised as hatchlings, but they don't really go offshore until they are quite large, also their commercial value isn't that high (it spiked when the blackened redfish craze hit, but really only the smaller ones are good eating).

However I think grouper is a possibility. We provide most of the east coast's grouper from here, and the fishery is getting threatened by overfishing (both commercial and recreational). They generally spend their entire lives in fairly deep water, so it could be a good candidate. The fillets go for $11 a pound retail, so economically it could be profitable.

Even better is red snapper, which is exclusively deep water fishing these days, and another expensive fish.
