I wouldn't expect much Latin to be spoken except among the Romans themselves. At this point the legions were still mostly Roman and would speak Latin. I would expect all the educated Jews and traders and city folk to speak Greek, at least enough for business. The fourth language would be Hebrew, which was no longer a vernacular but was still learned by the Jews to read the Torah and for prayers.

But the common language of the eastern Mediterreanean was Koine Greek. The name "Koine" means "common" and the Greek is a simplified language compared to Classical Greek. But it's no accident that the Gospels were written in Koine, not Latin or Aramaic, because they were meant for a wide audience.
