Well, it is not the tofu alone!

There are the spices and other vegetables involved lending their subtle flavors to the tofu..

I must admit, the first time I ate tofu, I thought it looked like, and tasted like wallpaper paste.

Now, I can eat it plain with a spoon.

In the eating of meat, the flavors of the vegetables are lost to diner by the powerful flavor of flesh and blood.
