Quiche Lorraine

~ favorite ~

8 ounces bacon (see note)
6 ounces Swiss Cheese, grated
1 medium onion, minced
3 large eggs, lightly beaten
10 ounces heavy cream
¼ cup water
½ teaspoon salt
½ teaspoon pepper
½ teaspoon dry mustard


Preheat oven to 375º. Generously butter a 9-inch pie plate.

· Cook 1 slice of bacon until limp; cut into 1-inch pieces, set aside.

· Cook rest of bacon until crisp; drain and crumble in bottom of pie plate. Sprinkle cheese over bacon. Cook onion in 1 tablespoon of bacon fat, until golden brown, drain and sprinkle over cheese.

· Beat together eggs, cream, water and seasonings. Pour into pie plate over onion. Decorate with reserved bacon pieces. Bake 45 minutes, until knife inserted in center comes out clean. Serves 8 to 10.

Note: My lazy way is to substitute ½ cup Hormel real cooked bacon bits. I also use egg substitute in place of whole eggs to cut down on cholesterol.

Per serving: 3.8g Carbohydrate; 0 g Fiber.

This is great for breakfast or with a salad for dinner. Refrigerate leftovers; reheat in microwave.
