What the book implies, and other sources I've read [which I cannot produce off the top of my head] spell out more directly is that changes [even a relatively small change from whole to milled rice killed millions according to D'Adamo] in diet are VERY VERY VERY meaningful to health... even life and death. It is known for example that the casiene [dairy] and gluten [most grain] proteins are very difficult to digest and end up in the blood stream to be attacked by the body in those with comprimised immune systems... this is being studied heavily in relation to Autism, ADD, ADHD, Chronic fatigue, some arthitis, etc. It is also suspected that the general incidence of allergy's to to grains increased dramatically [the above may be simply different forms of this] since GMO crops have been introduced.
What we know is true is that the changes in Western, especially American diet has been profound in the last 50 years.
What is not arguable in any way is that:
1.) the change has been due to the demands of industry [shelf life, yield, profit, etc.] NOT food quality.
2.) The safety hurdle on all this stuff, especially GMO products simply doesn't really exist. This issue is in it's infancy, and is not truely understood by anyone, especially not those creating the product. How can anyone argue that a wheat crop resistant to bugs is equally safe in your body as an unaltered crop with hundreds of years consumption under it's belt. It can't be argued... but under current rules, it doesn't really HAVE to be argued in a meaningful way.
3.) The book and almost every other real, credible health gurus all stress clean organic food for example... which science ignores as hogwash in general.
The truth of the matter is, no one knows as much as is needed to know... but one side claims to... despite mounting anecdotal and scientific evidence that that it is they who are 180 degrees off.
