IMHO, the crux of the matter is that the Allies and Neocon equate Nazi Germany and Japan. In reality, they were quite different. In Europe, the U.S. was fighting quite clearly on the side of "good" and opposing "evil". In the Pacific, there was simply a battle between two imperialists. The U.S. had no moral high ground at all. Our behavior in the Philippines established that, and Vietnam/Laos/Cambodia proved it after the fact.

So, I could see demanding Germany to unconditionally surrender (though the WWI reasons given by FDR are totally bogus). But, we had no right to demand any such condition from Japan. As you say, it was simply the desire to dominate for the sake of domination.
