Michael Oren went into the Liberty incident in detail in Six Days of War a book I would recommend if I thought you were interested in history. It was the forth day of a shooting war and the Israelis id'd the ship as Egyptian. Having id'd it, they attacked it.

Midway through the attack, they realized their mistake and began offering assistance and apologizing, very strange if they deliberately meant to sink the Liberty, an attack for which they had no conceivable motive in the first place.

Screwups happen in war. That's it. The very fact that you can't invent a more recent Israeli villany speaks volumes about the real nature of the relationship.
