Back to my youth, when we raised chickens. We kept the hens for the eggs. Each spring, when we started a new batch of chicks, my dad would begin butchering the older hens. They were always 4 pounders, or more. Those were the ones my mom would use for stewing. With home made dumplings or noodles. Man, I'm drooling, just thinking about those home made noodles. Needless to say, we ate a lot of chicken. ggg
