Janet, I am an unreconstructed, shameless carnivore. I like meat. For now, the only way to get my flesh fix is to off a cow.
I visited my wife's deceased grandfather's farm in central Chile. He had milchers and young steers. A personable bunch; I enjoyed handfeeding them, but I had and have no qualms about gnawing their bones. My only concern is that the slaughterhouse kill them quickly &neatly.
I respect the vegetarian culture. There is a frugal aesthetic to eating low on the food chain. I couldn't willingly do it though. "Gardenburgers" are a salad in wolf's clothing. And you don't want to hear my diatribe on salad... While I don't expect people to eat meat as some sort of patriotic duty, I also seek to not be the target of angry animal advocates. I resist the growing cultural pressure being brought to bear on carnivores, ultimately seeking to marginalize them like cigarette smokers now. For me a similar maxim applies: While I don't smoke, I find distasteful the movement to ban smoking.
Practically, I will approach vegetarianism more closely when the biognomes figure out how to grow steak on trees...
